Pecan banana bread
Ah, banana bread. I honestly think it’s the one thing that you can’t really mess up. Just measure things out (well, I actually don’t do this most of the time. Like I said, you can’t reallllllly mess it up), add them in the bowl, stick in the pan, bake it till it’s no longer gooey inside, BAM. Delicious banana bread.
Ingredients You’ll Need - Makes 1 loaf
1/2 cup butter (I use Kerrygold)
1/2 cup sugar
1.5 cups whole wheat flour
1 egg
1/2 tsp baking soda + 1/2 tsp baking powder
2 very ripe bananas
A splash of vanilla
Sprinkle of cinnamon
6 turns of pink sea salt grinder
Candied pecans — use a knife to chop them up into small pieces
Tools You’ll Need -
Mixing bowl, bread pan, parchment paper (or realllllly butter up the pan), microwave-safe bowl, spoon // scraper, oven (heated to 325 degrees), toothpick or chopstick, knife + chopping block
Get Ta Work -
Melt the butter in a microwave-safe bowl for about a minute in 10 second increments.
Pour flour, sugar, baking soda + powder into the mixing bowl and combine it all.
Add in the butter and mix. Add in the egg and mix.
In the same bowl as the butter was in, un-peel your bananas and mash ‘em with a fork until they’re creamy.
Add the mashed banana to the batter and mix until it’s all combined and wet.
Add in the vanilla, salt, cinnamon + (some) pecans and give it a final mix. I like to save some pecans + add ‘em on the top, but you do you!
If using parchment paper, lay it into the bread pan + press it into the sides as tight as possible. Then, add in the mixture.
Add to the oven at 325 for about 1 hour. Insert the toothpick or chopstick and see if any batter gets stuck on it — if yes, bake it in increments of 10 until it no longer happens.
Wow, that’s a lot of directions but I SWEAR it’s so easy. Like I said above, you really can’t mess this up so feel free to experiment — I honestly don’t think I’ve ever made two loafs exactly the same. Some other toppings // ingredients I’ve thrown in are chocolate chips, honey drizzle, peanut butter powder (PB2) + one time I tried chia seeds but I’m wasn’t the biggest fan there.
